Whole Grain Bread 101 (click for dates)
Imagine every crumb of bread you eat - from sandwiches to pizza crust - being homemade, healthy, and delicious! It's easy to do, using a master recipe with 20 simple variations, and it's speedy, too - only 75 to 90 minutes from whole grain to baked loaf. Discover how a few changes in technique can improve any recipe made with any type of mixer, machine, or by hand, so you'll never end up with a dry brick. Additional topics include: whole grain nutrition, milling fresh flour, four secrets of perfect bread dough, mysterious gluten, and more. Three breads will be demonstrated by the instructor to be sampled at the end of class. [Recommended book: No More Bricks, $16]

Cook for a Day, Eat for a Month (click for dates)
Do you find yourself in crisis mode at dinnertime, throwing something together at the last minute or else spending a fortune on fast food? Whether you love to cook or hate to cook, you can learn a simple system that will help you get organized to efficiently make tasty, nutritious meals in advance, then store them in your freezer for later use. This flexible method is perfect for singles and couples, as well as families, and NO extra freezer is required. See demos of freezer-friendly packaging, along with tips for saving money, teaming up with friends, and last-minute defrosting.  [Required workbook: Freezer Cooking Manual, $16]

Cooking with Whole Grains (click for dates)
Get to know ten different grains (wheat, spelt, Kamut®, oats, rye, brown rice, quinoa, millet, corn, and barley) and learn how to make them a simple part of your daily menu. Topics include cereals, soups, pilafs, and grinding fresh flour to make homemade convenience mixes for pancakes, muffins, and more. Optional - bring a rice cooker if you have one, for making samples to try.

Bread-in-a-Bag for Kids (click for dates)
For kids ages 8+ with an adult accompanying.
Look, Mom - no messy hands! Starting with freshly ground whole wheat flour, we'll squish all the ingredients together in a plastic zipper bag.  While it rises, we'll play games and learn fun facts about bread and whole grains. Then you'll take your very own loaf with you to bake at home for dinner.  [2 hour class, $5 supply fee includes handouts, pan, and loaf of bread]>

Meals in a Loaf (click for dates)
(Pre-requisite: Whole Grain Bread 101) After you've mastered basic whole wheat bread, expand your repertoire to include different grains and gain confidence in creating your own recipes. Bread-based meals are filling and help to stretch your grocery budget, while adding fiber and reducing overall calories at the same time. Learn how to make Kamut or spelt bread into pizza crust, calzones, stromboli, pigs in a blanket, pot pie, bread bowls, and hamburger/hot dog buns, with fresh-baked samples to try. [Optional baking supplies available from instructor]

Sweet Yeast Breads (click for dates)
(Pre-requisite: Whole Grain Bread 101) Here's another time-saving master recipe for making decadent (but still whole grain!) treats for breakfast or dessert, including: cinnamon, orange, or chocolate rolls, tea rings, doughnuts, fruit kuchen, and sticky-picky. Bring your sweet tooth for tasting samples! [Optional baking supplies available from instructor.]
