"This 146-page guide...is
packed full of easy-to-follow instructions, fascinating information
about the how's and why's of bread-baking, and a number of clear,
black-and-white photographs to reinforce what the author is explaining.
It's a large paperback book (8 and ½ by 11 inches)... No
More Bricks! is divided into two parts. In part one, "Bread Class,"
the author takes the reader on a journey of...topics like: "What makes
bread so hard?" "The case for grinding your own flour," "Mysterious
Gluten," and my personal favorite, "Getting to know grains and flours."
I had no idea there were so many different kinds of wheat and other
grains. The brief history of the grains (as well as the story of white
flour) is explored. Told with humor and wit, this part of the book is
just plain fun to read, as well as educational. All of the basic
reasons bread doesn't turn out--and what to do to fix it--are included.
Answers to questions like why it's important to knead the bread for a
certain length of time or which mixer is best for your needs makes the
whole process understandable for even a "clueless" beginner.
Besides being a unique and
practical bread-making book, I found No More Bricks! to be the
perfect textbook for a unit study on wheat--from grain to bread...
The book was exceptionally
complete, easy to follow, and a delight to read. As a veteran of
bread-baking, I highly recommend No More Bricks!

no idea that it contained the
treasure trove of information it does! I just assumed it was another
book of recipes. You did a fantastic job making everything so
understandable –
good mental pictures with your analogies as well as real pictures.

I just want you to know
that I believe your No More Bricks book is the best ever. I just got my
Bosch mixer and Nutra Mill both of which I love. I ordered a book to
help me better understand but was still having problems and confusion.
Then I went ahead and decided to make one more investment and bought
yours. It is the best, superb beyond any other. I have read it twice
and keep it close when I'm following one of your receipes. I just
started all this less then a month ago after I lost my job. This
certainly has helped keep me motivated and the success with your

I just wanted to write you
and say thank you so much for your wonderful and inspiring book!
I have been grinding grains and making my own bread for over a year
now. I have had mixed experiences with various recipes. I bought your
book and I read it cover to cover before I attempted anything. Today
was my first attempt. I made 5 loaves of whole wheat oatmeal bread and
a double batch of cinnamon rolls. I was very pleased... Thank you so
much! My kids ALL LOVED the cinnamon rolls.... I substituted soy
margarine and soy milk for the recipe and they were outstanding!

I am a home schooling mom to 10 kids and several with food allergies
(nuts, dairy, eggs). Cooking is always a challenge for such a large

Lori, I purchased your
book last year and have thoroughly enjoyed it. It's so easy to
understand; you have written to the novice (which is so helpful)and I
appreciate the straightforwardness of your instructions.
I am teaching a bread class,October 9th, as part of an ongoing
preparedness class for my local church group. I would like to include
the three pages on the Secrets of Perfect Bread Dough from your book in
their handout packet, if I may. I will show them how to do the "gluten
window" test and explain the other items, but thought if they could
have something to refer to later, it would be good.
